It's the jarring rhythm and squelchy weird sounds we all love them for plus all samples from real life which aren't effected so badly that they're totally unrecognisable adding to this even more trippy feeling and freshening up their sound no-end. Whirligig is the most amazing 20 second song/interlude/whatever "mussel and tomato sorbet-et-et". It's also got some normal loops and hooks, melodic and everything, La Cucaracha is amazing the middle section sounds like a regular setup almost and is so hooky and sweet, I think even their melodic sensibilities are over the top and cartoonish and they're so good and I love them so so much.
