Really boring xml question - You have been warned

I’m building a web form that has uses an uploaded xml file “telling” the form what fields are mandatory and where to mail the form and where the submission webpage is etc.

What I need is for the xml to say to email the submitted form to me (which I have done by writing:

<mail>
<to>workemail@mywork.ac.uk</to>
<to>
<subject>Online Report Request</subject>
</mail>

But I also want it to email the person who filled in the form. They fill in their email in a text box called “email” so I need to know the command that will also pick up their inputted email and email them the form too.

Do you see? I can completely understand that if you know any xml I’m making no sense and this is probably a zero replies from the get go, but hey, I’m totally stuck as it’s a bit specific to google and I’m not coming up with anything useful.
