how can you tell if something is legitimate?

I've been looking for little bits of part time work to earn some extra cash over the Summer and I've been checking gumtree a lot, I've heard there's a lot of scams so you have to be careful.
I responded to an ad for being a mystery shopper but there's something a little bit off about the emails, eg. sentences with a random capital in them or a random new line like
"The Western union location was reported for evaluation, Negligence for the following reasons:"

The company sign off at the end of the email says "BKS Mystery Shopping" but a google search revealed only a JKS company as far as I could see. Is there any way to check for absolute certain that a company is legitimate because I'm not having high hopes for this but if it is real then yay money.
